Spinach Quiche

This is recipe is one of my all-time favorites. Growing up, I'd request it for my birthday meal every year.. It's that yummy!

This recipe makes two pies. One for tonight, and one for the freezer. If you have a larger family, you'll polish off both in a meal.

You'll need:
4 tablespoons butter
1 1/2 cups finely chopped onions
1 1/2 cups finely chopped mushrooms
1 cup chopped bacon
4 tablespoons flour
1 1/4 teaspoons salt
1/2 teaspoon pepper
2 cups milk
6 eggs, lightly beaten
1 package frozen spinach, thawed and drained
2 cups grated cheddar cheese
2 pie crusts

Saute butter, onions, bacon and mushrooms together over medium heat until onions are transparent and bacon is cooked through. Add flour, salt and pepper. Stir quickly. Add milk, stirring. Cook until boiling and thick.

Remove from heat. Add eggs and spinach. Stir to combine.

Divide shredded cheese evenly and spread on bottom of each crust.

Pour spinach mixture on top. Bake at 375 for 35-40 minutes, or until toothpick comes out clean.
