Not a word of a lie; this is the easiest banana bread you'll ever make. If you've got five minutes, one bowl, and one mixer, you can whip this ultra moist, flavorful bread together in no time! Double the recipe and throw a loaf in the freezer or give to a friend.
You'll need:
3 very ripe bananas, mashed
2 eggs
1/4 cup milk
1/2 cup melted butter
1 1/2 tsp. baking soda
1 1/2 cups sugar
2 cups flour
1/4 tsp. salt
Combine all ingredients. Bake in a greased loaf pan at 350F for an hour, or until toothpick comes out clean.
Hint: I like to mix my dry ingredients separately, and then add them to the wet ones. Biting into a chunk of baking soda is just plain nasty. :-)
